Gingery golden beet salad

Beet SaladThis recipe is so easy to pull together and so satisfying.

The flavors of ginger, garlic, onion and fresh herb blend smoothly into the golden beet and red cabbage to create a tasty, enzyme-rich, and energizing accent to a larger green-leaf salad.

1 large golden beet, grated
1/2 cup chopped red cabbage
2 tsp. minced ginger
½ tsp. minced garlic
1 Tablespoon minced onion
1/3 cup chopped fresh herb, like parsley, cilantro or mint
2 Tablespoons fresh lemon juice
1 Tablespoon vegetable glycerine
¼ tsp. sea salt, preferably unrefined
Sesame, pumpkin, or sunflower seeds (optional)

1. Mix all ingredients.
2. Garnish top with sesame, pumpkin or sunflower seeds (optional).
