2 cups cashew pieces, soaked for 6-8 hours and drained well
1 roasted red pepper
1/4 cup water
1/4 teaspoon sesame oil
1 clove garlic, minced fine
1 teaspoon finely chopped ginger
1/3 cup fresh herb, including cilantro, flat-leaf parsley, rosemary, or basil (optional)
Salt and pepper to taste
What You Do:
1. Place all ingredients in a food processor and process until smooth, scraping down the sides of the bowl frequently.
2. Process for 3 minutes to make the dip completely smooth.
3. Adjust salt and pepper.
