Some beans are easier to sprout than others. I’ve learned that mung beans sprout easily within 1-3 days. Sprouts are great to sprout yourself because you can eat them when they are smacking fresh. Here are the simple A-Z details for sprouting mung beans. A bowl and a facecloth are all you need.
Start with:
1/4 cup mung beans (will yield 2-3 cups of sprouts)

Directions:
-
Soak the beans in water for 8 hours.
-
Drain and rinse the beans. Return to a large bowl.
-
Cover the beans loosely with a paper towel or face cloth.
-
Set the bowl aside on a countertop to grow.
-
Rinse and drain the beans in a strainer 2-3 times each day.
The sprouts are ready to eat when they’ve grown “tails” of ¼ – ½”. Add them as a pretty topping to salads, soups or stews; or stuff them into sandwiches for satisfying crunch.
